Jabuticaba Wine
From the jabuticaba, the Brazilian grape that grows straight off the trunk of the tree. It gives a wine of deep colour and dark fruit. We make it when there is fruit, so there is not always some.

The catalogue
Almost all of it comes from the whole cacao fruit: wine from the pulp, chocolate from the bean, tea from the husk. And when the season allows, wine from other fruit too. All of it by hand, in Guamal.

Some are packed and travel well; others only exist where they are made, freshly prepared. Each card says which part of the fruit it comes from and how to get it.
All three come in a 750 ml bottle at 12 % vol.: the fruit changes, the format does not. The fruit wines are made by season, so we do not always have all of them.

From the pulp

From the pulp, collected the same day the pods are cut, before it ferments on its own in the box. Dry, with ripe fruit, and no chemicals or preservatives. It is the product everything started with.

Ripe pineapple fermented slowly, down to a clear, light wine. It is the freshest of the three and the one we repeat least often: it also depends on the season.
These are not eaten, they are made. Into the pot or the cup, with milk or with water, and out comes the afternoon chocolate.
From the bean

Beans fermented for six days, sun-dried and stone-ground, the way it has always been done here. No sugar, no milk and no lecithin: the tablet is cacao and nothing else.
From the bean

Ground cacao sweetened with organic panela, and nothing else. It dissolves in milk or water and asks for no extra sugar, because the panela is already in there.
What comes ready: open it and eat it. From the bar to break and share to the filled chocolates, which are the sweetest-toothed part of the catalogue.
From the bean

Sixty-five per cent cacao, which is where chocolate still tastes of fruit and already lets itself be eaten as it is. A fifty gram bar, to break and share.
From the bean

A dark chocolate shell filled with the pulp of the fruit itself, still liquid. Break it open and the pulp runs out: cacao outside and cacao inside, in two textures that have nothing in common.
From the bean

Filled with nibs, which are the roasted bean broken up. It crunches when you bite it, and that is exactly what an ordinary filled chocolate does not do.
From the bean

It brings together the two things the house does best: dark chocolate outside and cacao wine inside, still liquid.
A single product, and it comes from what almost everywhere else gets swept up and thrown away: the thin skin the bean sheds as it roasts.
From the husk

The thin skin the bean sheds as it roasts, gathered straight from the roaster and sun-dried. It smells of chocolate, tastes mild and carries no caffeine at all.
The ones that do not travel. They are made where they are sold — the market, the fairs — and drunk right there, good and cold.
From the pulp

Cold, thick and tasting of real cacao. It is blended on the spot and drunk right there: there is no way to keep it or to send it.
From the pulp

Cacao pulp with citrus: sharp, light and very cold. It surprises anyone who assumes everything that comes from cacao has to taste of chocolate.
From the bean

Artisanal yoghurt with cacao nibs in it, so you drink it and chew it at the same time. It is kept cold and does not last long: that is why it is made in batches and there is not always any left.

Muy rico, aunque para mi gusto lo serviría un poco más frío de lo que dice la etiqueta. La botella es bonita para regalar.
Rico, pero esperaba que se sintiera más el vino. Igual lo volvería a comprar para probar otra vez.
I bought it at the fair thinking it was just another chocolate and ended up going back for three. We shared it at the office and it didn't last an hour.

For an outdoor barbecue it's perfect: chilled, fruity and light. We took it on a river outing and there was nothing left.

Refreshing like nothing else. I'd never tried anything like it: half lemonade, half cacao fruit. Perfect for the heat of the plains.

Finally a Colombian dark chocolate that has nothing to envy imported ones. The 65 % is just right: intense but not harsh.

With cheese and almojábana on a Sunday, there's nothing more to ask for. It melts easily and goes a long way.

Thick and full of chocolate flavour. My kids ask us to bring it every time we go into town.

Suave y fácil de tomar. Lo acompañamos con una tabla de quesos y quedó perfecto.
There is no cart here. Some products can be sent and others only exist where they are made, so the way depends on which one you want.
The wine, the chocolates and the tea are made and packed: they travel well. Message us on WhatsApp, tell us what you want and where it goes, and we will tell you how it gets there and what it costs.
The milkshake and the citrus drink are made on the spot, and the yoghurt is made in batches for each event. You will find us at the Guamal farmers market and at the fairs we go to.
We sell both ways. The difference isn’t in how you’re treated, it’s in the price per unit once the order grows.
Take one and that’s it. No minimum order and no conditions: you order what you need, when you need it. It’s the usual way if it’s for you, to try it, or as a gift.
On a large order the price per unit comes down. And what counts is the total across everything, not how many identical units you take: you can mix wine, chocolate and tea.
The milkshake, the citrus drink and the yoghurt fall outside this: they are liquid and cannot be shipped. For an event they can be made in quantity, agreeing a date and settling on whether we bring them or you come and collect them.
Tell us what you are after and we will tell you what is available right now, in what size and how it reaches you. No forms: one message and that is it.
